Turkey Cheeseburger Soup
This week I channeled my love of cheese into Turkey Cheeseburger Soup. It was fantastic. Creamy, cheesy goodness with enough vegetables that I felt good about what I was eating.

As a little kid I had two breakfasts that I would request, egg in a hole and cinnamon toast. Egg in a hole was by far my favorite. I loved toasty warm bread and gooey yolk. Plus I loved saying egg in a hole with extra emphasis on the hole. This Valentines Day I’m going to start my morning off with a Valentine egg in a hole.
This year for Valentine’s Day I’m going to make my sweetie a three course meal of Caprese Salad Skewers, Spinach and Artichoke Penne, and Creme Brulee.
So, with Valentine’s Day coming up I decided to step outside my normal banana repertoire, which consists of plain bananas, bananas with peanut butter and banana bread. I made banana cake balls.
I have been looking for an easy version of Beef Enchiladas for a while. I am so excited to have a Beef Enchilada recipe that I can whip up in less than an hour.
If you’re like me and need some last minute inspiration for the super bowl, I have rounded up a few recipes. I found recipes for White Pizza Dip, Soft Pretzel Bites and Grilled Proscuitto, Fresh Mozzarella Garlic Toasts.
I had never made Roasted Broccoli before and it was so easy. It only took a few minutes and I ate the entire pound for lunch. Then, I wanted more.
In situations where I need mashed potatoes, but don’t want to make gravy, I make these Garlic Chive Creamed Potatoes. They are the perfect accompaniment to steak, pork chops, roast, chicken, and more.
Yesterday my friend Marissa came over for dinner. We both love the Pioneer Woman, Ree Drummond, and I wanted to add my own flare to one of her recipes. I looked through her blog and settled on this Spinach and Artichoke Pasta recipe.
This salad looks so different and unique, full of texture and flavor, I really want to try it soon. I love the healthier take on brownies with the banana brownie recipe and these salted nut squares would be a great super bowl treat!
