This week I have really been feeling the winter blues. I spent Wednesday evening looking for comfort food recipes on pinterest. These recipes for Sweet Potato, Sausage and Kale Soup, Sun-dried Tomato Parmesan Basil Whirls and Ranchero Breakfast Tostadas were my favorite finds.
This week I channeled my love of cheese into Turkey Cheeseburger Soup. It was fantastic. Creamy, cheesy goodness with enough vegetables that I felt good about what I was eating.
As a little kid I had two breakfasts that I would request, egg in a hole and cinnamon toast. Egg in a hole was by far my favorite. I loved toasty warm bread and gooey yolk. Plus I loved saying egg in a hole with extra emphasis on the hole. This Valentines Day I’m going to start my morning off with a Valentine egg in a hole.
