This week’s pinspiration recipes are brought to you by my love for a variety of vegetable dishes. Broccomole, Tomato Basil Quinoa Salad and Avocado Tomato Salad are all recipes I don’t make normally, and I can’t wait to try them. I love guacamole and this broccomole is made with broccoli. It’s a lower calorie version of guacamole but has more protein! I can’t find anything wrong with this idea. I’ll definitely be making broccomole for the Super Bowl. Both of these tomato salads look so flavorful, fresh and perfect for this summer. Is winter over yet?
